Zucchini Pancakes Recipe

Recently, a friend introduced the concept of Zucchini Pancakes to me and boy is it yummylicious!!!

I can eat these babies for breakfast lunch and dinner.

Charlene’s Zucchini Pancakes 

1 medium zucchini (shredded loosely)

1 large egg

1/4 cup egg whites

1/2 cup flour

1/4 ++ cup water ( I use the eye ball method)

dash of black pepper

dash of red cayenne pepper

** Optional 1/4 cup shredded Mexican cheese (More fat, but more deliciousness and makes the pancake crisp up nicely)

*** if you don’t add cheese maybe a sprinkle of salt

****makes 2 big pancakes

Kris and myself have a competition going on.  Its the “Who can be more hardworking” competition. Its basically measured by the sheer amount of waking hours spent on work.

Apart from when he was OUT COLD from his flu, I think he wins. He’s still sick actually but he decided to still infect everyone at work go to work regardless. 😛

I got a milder version of Kris’s cold but what really bothered me was tooth issues on both sides of my jaw. Annoys me to no end because I love food, I love chewing yummy food. Now I’ve resorted to mostly fruit smoothies and fattening milkshakes. I went for a Singaporean event the other day and I could only eat chicken rice and flat rice noodles coz it required v little chewing. I had to swallow some satay and throw away the yummy Hainanese chicken. It makes me very sad. Very very sad.




So spring/summer is here and what better way to cool down than with fruit smoothies? I usually eat it for breakfast or brunch depending on how much left over fruit there is!

Nectarine Mango Smoothie

Ingredients List (Nectarine, Mango, greek yoghurt, flaxseed, granola, almonds, pecans and a dash of tumeric)


Green Power Smoothie

Ingredients List ( Avocado, Kale, Spinach, Almonds, Pecans, Hazelnuts, Pistachios, flaxseed and a dash of maple syrup)


Purple Wonders Smoothie

Ingredients List (Strawberries, Blackberries, Yoghurt, Flaxseed, Almonds, Pecans, Pistachios)


Choco-Banana Smoothie

Ingredients (Banana, Cocoa Powder, Oats, Flaxseeds, Wheatbran, Milk, Raspberries, Pecans, Almonds, Hazelnuts)


Orange Mango Tango Smoothie

Ingredients (Orange, Mango, Blackberries, Oats, Milk, Flaxseed)


Strawberry Happiness Smoothie

(Vanilla Froyo, Strawberries, Flaxseed, Oats, Pecans, Almonds)


Love with Food Box November 2013

There a recent trend of food boxes, like Love with Food, Nature Box, Paleo Box etc etc, you can find more subscription boxes HERE. Basically they would send you new products or various products every month for you to sample new stuff. If you’re a foodie like me, who has a LOVE-LOVE relationship with yummy nom-noms, you’ll LOVE it. The thing with Love with Food is that they also pledge to donate a meal to a hungry child for every box you order. Although, I’m not sure how much that meal costs, and who I am donating the food to. You have to well, trust them.

(Which is increasingly difficult in this technologically advanced world of ours. There’s a severe lack of human touch. I use to internet to talk more than I meet people face to face, or feel more comfortable for that matter using the keyboard to communicate. I digress)


I’ve been wanting to try Love with Food for ages but I’m a closet commitment-phobe so I was holding back for a while. And Violaaaaaaa, one day FB had an amazing discount of 5 dollars for your first box (with an option of canceling future subscriptions), so I thought, why NOT!

Lets do it.

So I signed up and waited anxiously for 2+ weeks and yesterday, my wait ended.

Are they worth it for 10-12? I’m undecided. Price value wise and free delivery is pretty awesome but! if you don’t like some of the products in it, then maybe it won’t be worth it for you. Also, if you love new surprises every month. It might be fun.

Restaurant Week Review: La Silhouette

For restaurant week, I went with a group of girl pals to try out french cuisine!

25+++ for 3 meals in a fancy restaurant. I love restaurant week!!!

Complimentary bread before the meal

I loved it because it was so soft and held the perfect density for bread with I love. I don’t like super airy breads that are so crusty on the outside and almost full of air pockets underneath. I love the bread under the crust to be moist and soft!



Appetizer (Mine) – 

Garlic Chips, Lemon Zest, Parsley, Smoked Salt, Toast

This was really good, rather heavy sort of food, so I’m glad the portion size was small. The bone marrow itself was huge, but what was scoop-able/edible was maybe 2-3 tablespoons at best. It was good, but a little heavy for me. Bone marrow loves will love this, I’m not a big fan of bone marrow but I heard great reviews about it online so I wanted to try it myself.


Appetizer (Friend’s)

Celeriac Remoulade, Pickled Radish, Whole Grain Mustard

My friend’s country pate looked so delicious/pretty that I had to take a snap! She polished it all off, so I’m assuming its super delish!



Cipollini Onions, Roasted Mushrooms, Sauce Charcutière

I loved this dish the best! The pork was crispy on the outside with a slightly burnt taste and super soft and succulent on the inside. All the ingredients were really fresh and came together well.  (Against adjust your expectations of serving size because the onion was only like 1 inch wide)



Vermont Goat Cheese, Roasted Strawberries

This didn’t quite do it for me, simply because goat cheese is a little too funky smelling for me. I prefer regular cow’s cream cheese. The quality of ingredients was still very good IMHO despite preferring moo-moo’s cheese!


The food was excellent, for big hungry males it might have been too little food in too big plates but for ladies, it was the perfect portion size for us. I guess the problem with taking food close up is that the camera angle tends to exaggerate the size of the food. I mean the cheese cake was about like 2 inches in diameter but it looks huge in the photo.

In short good food and great company made for an excellent lunch. Special mention must be made to the wait staff, they were IMPECCABLE! Super polite, came at the right time, left at the right time and didn’t push the checks at our faces at the end of the meal. Best part? They overheard that it was my friend’s birthday and they actually wrote happy birthday on her dessert. I mean how attentive can any service get?

You know how some fancy places can have snotty waitresses/ ushers especially when you don’t deck your self from head to toe in luxury brands? this place has NONE of that crap!

I’ll be happy to go back and pay full price for anniversaries or special occasions just because the service was so good! In the Capital Grille’s restaurant week, they put people who came for restaurant week/not dressed in designer power suits wayyyyyyy back at the end, (in front of an open window that had construction outside!!) which was kinda like -_-

So in short La Silhouette has scored it self some repeat customers!

Cod marinated with soju and Vegetarian Aglio Olio

So the other day I was inspired to cook and I made two dishes which we both really liked!

Baked Cod and Aglio Olio. Its really simple.

Get a nice piece of cod and marinate it (for half an hour) with

1) Soju (1 oz of soju or any white wine)

2) Lemon juice (1/2 a small lemon)

3) slice up pieces of tomatos

4) Cube some carrots

5) Dash of black pepper

6) Dash of salt

Then bake it for like 30 mins. Violaaaaaa you have awesome cod with no fishy smell or taste!



The Aglio Olio was even easier. Choose any pasta of choice and cook to desired texture. Set aside to cool. Use around 2 table spoons of olive oil and fry liberal amounts of minced garlic. Stir in kale and peas after 1 minute, then add in cooked pasta! Just before serving add in desired amount of Parmesan cheese and drizzle some extra virgin oil and here you go! Aglio Olio!
